VINKUBALA

Ingredients

  • Clean  the Caterpillars
  • Soak them in warm water until soft.
  • Drain the caterpillars and season with salt and paper
  • Heat some oil in a frying pan or pot
  • Fry thoroughly on high heat until crispy (about 10 minutes)
  • you can also add onions, tomatoes, papers and paprika or any seasoning of your choice.
  • Serve as a snack or with  maize meal.

 

 

             CHIKANDA

  Ingredients

  • 6 cups of water water
  • 1 Teaspoon soda (heaped)
  • 3/4 cup ground Chikanda powder about 150ml mark on your cup
  • 3 cups of pounded groundnuts
  • 2 Teaspoons salt (level
  • (optional things to add)

        smoked paprika

        shallot onions/ or any onion

        chilli

        chives and green onions

 

Instructions

  • In your pot mix cold water, groundnuts, soda and salt. Put the pot on the stove and continue to stir until boiled. When it starts boiling, slowly add Chikanda powder and optional chilli powder whilst stirring. As you continue to stir, it will get firmer and firmer. In a separate bowl, Mix three teaspoons of groundnuts with 1 pinch of soda in 5 tablespoons of water. Add this mixture to your pot slowly as you continue to stir your firming Chikanda. You will know it is ready for the oven when your mixture stops to stick.

 Put mixture in oven proof         container – ideally a metal pot.    Shape it with a wet spoon like     you would nshima. Place in the oven at 180’C for 20-30 minutes. Test with a toothpick or knife to see that nothing sticks.

 

After it cools, remove from pot, cut off the top and turn it upside down for a more rounded and symmetrical look.

 

 LUMANDA VEGETABLES

 

Lumanda  vegetable  is very popular in Zambia. It is a very delicious dish among Zambian recipes.  The natural sour taste contributes to it’s delicious taste It can be prepared using cooking oil  mixed with white garden eggs or with  groundnut powder. Some studies have recorded that   Lumanda may help control hypertension .

DRY LUMANDA  VEGETABLE WITH    GROUNDNUT POWDER

Ingredients

Dry Lumanda vegetables

1/2 cup pounded groundnuts

1 small/ medium Onion

1 medium chopped tomato

2 teaspoons soda

Some salt

A bit of water

Method

1. Remove the  leaves from the       stems and wash

2. Add in the pot with 3/4    teaspoon soda and a bit of water. Boil for some 3 minutes

3. Add the chopped tomato, onions and the powdered groundnuts and begin to stir         continuously.
